RAVENS FUCKING AWESOME DONUTS
3/4 cup milk
2.5 Tbs. short’ng
2 Tbs. sugar
3/4 tsp. salt
1 Tbs. flax
2 1/4 tsp. yeast
1 1/2 cup flour
Combine warm water & flax to make an “egg”. Whisk and set aside to cool.
In a microwaveable bowl add shortening, milk, and flax mixture. Microwave on half power for one minute (HALF POWER I SAY!) until mixture is slightly warm to touch. It doesn’t matter if the shortening is still clumpy, it will mix when you knead.
Place the flour on top of your liquids to create a dry barrier for the rest of your ingredients to sit on. Gently place the sugar on side, the salt in the middle, and the yeast on the opposite side.
Immediately mix everything until a soft, tacky, slightly sticky dough forms. Knead for two minutes. Do NOT add more flour, the softer your dough the lighter your donut.
Place dough in a large, lightly greased bowl. Cover with plastic wrap.
(I placed this bowl on top of a smaller bowl with warm water inside to keep the mixture at 80 degrees. It’s cold in my kitchen.)
Let sit 40-60 minutes until doubled in size.
Knead the dough again to reactivate the yeast.
Place on a sheet of oiled parchment paper and gently press out into a round disc 1” thick (or the height of a penny). Cut with a cookie cutter or mason jar. I used the cap of my vanilla extract to cut out the small hole in the center. Use the scraps and holes to re-roll. Cut again. Re-roll. Cut again.
You should have 11 donuts and a scrap of dough when done.
—-HEY WAIT! The next few steps are important, so read carefully, skip nothing.—-
Preheat oven to 450
Place 6 donuts on a lightly oiled baking sheet. Cover with plastic wrap. Place the other donuts on another sheet and cover. Let sit 30 minutes until doubled in size again. Keep them on top of the oven so they stay warm.
Once oven is ready, place ONE sheet of donuts in the center rack and bake for 3 minutes. Flip donuts over and cook for another 3.
Repeat for the second tray.
DO NOT BAKE BOTH TRAYS TOGETHER. You have been warned.
I made a special pink glaze out of powdered sugar, vanilla, oil, and a splash of soy.
